I am able to eat more of a variety of food in Japan than I am in the US. Besides Japanese food, the best Indian, French-style, and Pan-Asian food can be found in Kobe. I also love going to (Italian-style) pasta restaurants because the pasta is al-dente rather than mushy at typical American pasta places. You'll get a better hamburger in the US, but the best steak I ever ate was in Tokyo (thankfully I wasn't paying for it).

Japan isn't like some backwoods tribal land (I know you know that) but MOST of the food is cooked. Sushi and sashimi (raw) is a delicacy that most Japanese eat only a few times a year. (Some might eat it more regularlly, but raw fish isn't a staple like white rice, despite what some think).
