A monkey is an animal which is very skillful at climbing a tree. So it seems that a monkey never slip and fall from a tree. But actually, it sometimes slips and falls from a tree.
So the proverb is used figuratively, when a skillful expert makes a mistake.

Another old Japanese proverb says; 弘法も筆のあやまり（こうぼうもふでのあやまり）
弘法（弘法大師） was an old Japanese priest, who was very famous for his excellent calligraphy. Yet, we sometimes find that there were typos in his writings.
弘法も筆のあやまり＝サルも木から落ちる
I use those proverbs identically, and interchangeable each other, or I use them both at a time.
