I like lots....but I'm mainly one to watch the romance animes just so I can get my fill of romance since my love life is totally suckish at the moment. Plus I'm a hard-core romantic, always have been haha. But I like death note, full metal alchemist, code geass [the endin made me sad], princess tutu [XD], fruits basket, scrapped princess, ouran HSHC, shugo chara...ect

I usually prefer horror, but romance comedy is nice too. The ending to Fma made me cry so much, still does to this day.

FMA has one of the best stories I've ever had the pleasure of viewing. Gripping characters, nothing too cliche, I loved it (and of course, not complete unless you watch the movie afterward).

Cowboy Bebop is rockin', it'll make you view things a bit differently, that's for sure.

Love Hina's always a good choice if you're like me and a sap for romance.

One Piece is one of the best action animes I've seen in a good long while. Granted, like all long winded massive episode animes, a few episodes could've done without, but it's still rockin'.

Trigun's rockin', no matter what else you've seen. Great characters, great character development, and amazing ideas about the human decision on life and death.

Full Metal Panic is a good one, especially if you watch all three "seasons", The Second Raid and Fumofuu (good Lord I spelled that horribly wrong). One of the better mecha animes, and one of the more humorous ones.

Oh,

^And this one.

I've recently finished watching Shion no Ou (a shougi [japanese chess] mystery anime), Grenadier (the lead character is fanservice x1000, but it's a fun watch), and Gunslinger Girl. All highly recommended.

Currently watching Black Lagoon. If you liked Cowboy Bebop, you've got to check out Black Lagoon.

So much to choose from and in the end it all depends on what you like. Currently , I'm watching some 2008 stuff that I've really grown attached to:
Kyouran Kazoku Nikki
Nokizaka no Himitsu
Wagaya no Oinari-sama
Zero no Tuskaima - Princess no Rhondo

but there are some good ol' standbys out there too:
Fruits Baskets
Chobits
Shakugan no Shana
Tokyo Mew Mew
