Professional Japanese Chef Wanted!

Good afternoon.

We are a catering company located in the Island of Malta. We run 8 different outlets, Restaurants and Coffee Shops.
Among them a Japanese Restaurant called "Zen".
Due to change of staff we are in the process of looking for new Chefs, who might be able to work and live in Malta.
We would appreciate if anyone could instruct us on how to find the right "channel" to recruit the right candidate for our company.

Why hire a chef? All you need to do is cook fish or meat in Tariyaki sauce and serve over rice. Wah la! (I always tease my wife about this.
