Trying to find out what this Japanese dessert is called!
 
Hi guys,

Hope you can help me. (I'm not Japanese, btw)

About a year ago I was in a Japanese restaurant in London. I think it was called AKARI.

I had a sweet dessert there which I really really liked. I'm trying to find out what it was in the hope that I can make it myself.

Basically it was a small pot with a sort of thick mousse in. It was made from tofu/soya beans. It had a thick texture and the colour was green. I'm pretty sure this was because of the green tea in it. Once you ate this layer of green moussey stuff, at the bottom there was some beans with some sweet syrup poured over it. I don't know if this was edamame/soy beans. I expect it was.

If anyone here knows of this dessert and what I'm talking about..please please let me know!!

Was it this one? It's called wasabi but it think it's hot and not sweet but it's also a dipp ;)

lol...not sure if that's supposed to be a joke, but no, it's definitely not wasabi. :cool:

I cannot imagine certain one, but try to make advice.

Green tea is often used in Japanese sweet as "Maccha"(powder green tea), there are many kind of Japanese sweets with "Maccha-aji".
Grinded edamame for sweet is called Zunda, that is famous as Zunda-mochi.
Beans in syrup may be Mitsumame or Anmitsu.

Well I found it.

It's the one called PUDDING.

:D

I guess it's not well known or common. Hence the very ordinary name.

Oops, late. Never mind that then.

In the event though, that they've changed the menu since you were last there. It sounds to me like some sort of Matcha Double Bill without the cake-base. The green stuff would then be a green 'Matcha' tea mousse. The bottom was 'an' or bean jam. Were the beans red? If so, that's aduki bean jam. If they were white, it was made with white beans like navy beans.

Most likely. Sometimes it comes as more of a sweet 'soup' than jam, and you can get smooth paste as well as the type with the whole beans in it. Recipes for it are easy to find and you should be able to find aduki beans (dried, tinned or frozen usually) in some supermarkets. If you're still in the UK try Tesco, but if not Waitrose definitely have it.

Black Sesame Soy Milk Pudding by "Ottorecipe"
 
 ■材料   5個分
Ingrediants- Makes 5 portions.
  豆乳(無調整)・・・400ml
Soy milk (muchousei means literally 'unregulated' but I'm unsure as to what that really translates as) 400ml.
  黒練りごま・・・小2
black sesame paste 2 teaspoons
  砂糖・・・100g
sugar 100g
  卵・・・2個
2 eggs
  炒り黒ごま・・・適宜
Toasted sesame as needed
 ■作り方
Method
  1.小鍋に豆乳と砂糖を入れ、泡立て器でかき混ぜ ながら人肌くらいまで温める。
1. Put the soy milk and sugar into a small pan, bring up to about body temperature whilst mixing with an egg beater at the same time.
  2.ボウルに練り黒ごまを入れ、1を少しずつ加え ながら溶き混ぜる。
2. Put the sesame paste in a bowl, add the milk mix little by little, mixing until the paste has dissolved.
  3.器に卵を割り入れてよく溶きほぐし、2のボウ ルに少しずつ加えながら混ぜ合わせる。
3. Break the eggs into a container and whisk, then gradually add the eggs to the sesame milk and blend together.
  4.漉し器等でいった漉して、器に注ぐ。
4. Strain the mix through a sieve.
  5.蒸気の上がった蒸し器(蒸篭)で強火で2分、 少し弱めて(中火よりやや強め)で15分程蒸す。
In a steamer, steam the mixture on high for 2 minutes, then turn it down a little and steam for a further 15 minutes.
中心に竹串をさして何もついてこなければOK。仕上げに り黒ごまを振って出来上がり。Test the centers of the puddings with a skewer; if it comes out clean then they're OK. Finish by sprinkling the toasted sesame over the top.
