Cool Does anybody know any good Japanese recipes? - 10-18-2007, 04:05 PM

I've had a major itch lately for an AWSOME Japanese dish but I don't know any good ones except for sticky white rice!!

So if anybody knows any, I'd appreciate it greatly!!!

Chicken Teriyaki... yums... if you slice some leeks and fry them lightly to go with it, also radishes go with it quite well.
Anyways, I made this for my dad on father's day, or his birthday, I can't remember which.

INGREDIENTS:
3/4 pounds chicken breasts or thighs
2 tbsp sake (rice wine)
4 tbsp soy sauce
4 tbsp mirin (sweet rice wine)
2 tbsp sugar
1 tbsp vegetable oil [may not want to use, see further down in post]
*grated ginger

PREPARATION:
Poke chicken using a fork. Mix other ingredients in a bowl. Marinate the chicken in the mixture for 15 minutes in the refrigerator. Heat some vegetable oil in a frying pan. First, fry the skin side of the chicken on medium heat until the skin is browned.
Turn the chicken over to fry the other side on low heat. Pour the sauce used to marinate chicken in the pan. Cover the pan and steam cook the chicken on low heat until done. Remove the lid and simmer until the sauce becomes thick. Stop the heat. Slice the chicken and serve on a plate. Pour thickened sauce over the teriyaki chicken. Garnish with grated ginger if you would like.

You might not want to pour the left over sauce onto the finished chicken and use it as a dip for the leeks instead. I love ginger, but I never used it on mine, if you haven't eaten ginger before you may not like it, personally I think it's an aquired taste, because it's so unlike other stuff... I have weird tastes [except today I poisoned myself... I dropped a piece of my baby cuttle fish into some soy sauce then, idiotically, ate it... I still have the taste in my mouth =(]. Anyways, also, for a healthier option you might want to use a non-stick frying pan and use no vegetable oil, because the chicken skin will provide other oil/fats so it won't stick and burn. Oh, and you can boil some rice to go with it too!
