Grammer-wise, what is wrong with りょこうがすきじゃないですから、いきません。

You typically don't use ます form anywhere in the sentence except the last verb, if even there.

旅行が好きじゃないから、行きません。

Granted, people do use ます form elsewhere for a formalish effect (or to sound like an idiot, depending on context: I'm looking at you, little pocket robot from Chobits), but I wouldn't worry about that at this stage in your learning.

I've tried that but it was also incorrect. Would it make sense if I have いくん in there somewhere?

It's not so much grammar as the wrong word choices and combination. A native speaker would NEVER say this. The すきじゃないですから part sounds as foreign as something can sound.  

Why combine the highly casual じゃ with the non-casual です or ません? The speaker must choose one way or the other.

Non-casual: 「りょこうはすきではないのでいきません。」 You don't need a comma in this. 

Casual: 「りょこうはすきじゃないのでいかない。」 More colloquially, 「りょこうはすきじゃないんでいかない。」
