Linking verbs - eg. 'I am sightseeing and playing'
 

As far as I've managed to gather, you can't link verbs with　と...correct?

I want to say in response to スペインで何をしていますか that I am sightseeing and playing (partying).
The sentence I came up with in my head was:
バルセロナで見物していると遊んでいる。

If と cannot be used, how would I modify my reply?

Correct. と can only link nouns.

バルセロナを見物したり遊んだりしている。　or

バルセロナで観光したり遊んだりしている。

Casually, you can say ブラブラしたりしている in place of 遊んだりしている.
