Sure thing, Shounen and Shoujo are mangas/animes intended for teenagers(Shounen for boys and Shoujo for girls, as the names indicate), examples of such series are Naruto (Shounen) and Fruit Basket(Shoujo).
Josei and Seinen are mangas/animes intended for older people (Seinen for men and Josei for woman), examples of such series are Gantz (Seinen) and Honey and Clover (Josei).
And there is another category that isn't listed here, Kodomo which is intended for children, example of a Kodomo series is Hamtaro.

I love everything Josei and Shoujo. They always have a lot of things that I can totally relate to and what not. I don't like mindless violence sometimes, meaning I can't stand watching any shounen anime. I can read it, but not watch.

I also like Seinen, as long as it's not pervy. It can be dark and kill-hack-slash, but I don't like seeing girls naked. The only thing that would be considered Seinen I actually thought was funny, cute, and great is anything by Ken Akamatsu. He's the guy who made Love Hina, AI Love You, and Negima.

To make this job easier search Wikipedia for a manga you like, then underneath the image on the right it tells you what magazine it appears in.

So I searched for "Blade of the Immortal" found it was in "Afternoon" magazine, clicked on the link and discovered that the magazine also ran Eden, Parasyte, Gunsmith Cats, Shadow Star etc. which are all manga series I enjoy.

Ah, Shojo is good. But I will read pretty much anything as long as it isn't Naruto or Bleach... I don't really like them for some reason. :X
