If you want REAL samurai action, check out Lone Wolf and Cub, Samurai Executioner and Path of the Assassin.

Rurouni Kenshin seems to have already been mentioned... however, the Samurai X OVA's should be good (even though I haven't seen them myself), and also check out Samurai 7

There's also Hunt for the Sword Samurai, but I'm not sure how good that one is either

If you're still in need of samurais after all those you should check Samurai Deeper Kyo.

I'll third Rurouni Kenshin and second Samurai 7. They are both quite entertaining.

I heard good things about this one and will be checking it out next week.

samurai 7 (recommended)
Samurai X OVA
Samurai Deeper Kyo
Peace Maker Kurogane

if what you want is sword play, then the list will be longer
