u r right. actually i did a part time job in a japanese restaurant and although the sauce we used the most was soy sauce, we also used non vegetarian sauces like ponzu. but japanese cuisine is very rich and there are a lot of dishes without non vegetarian sauces and others where the sauce is served seperated from the dish. I guess the difficult part is to know which dish has the sauce or meat in it and which one doesnt. it s a bit complicated i agree
