These are the ingredients that I used (for 2 people):

I'm jealous! I plan to make some myself for the first time next week. It too will be the first time I have made it. Weird since it is literally my favorite Japanese food period. i lived on that stuff for a while. :)

Well, not only was it my first time making it, it was my first time having it as well, so I don't really know what "real" okonomiyaki with proper dashi, agedama, yamaimo and okonomiyaki sauce tastes like.

Next time I make it I'll add agedama and hopefully yamaimo as well, and I think I'm gonna add some shrimp and octopus as well.

Shrimp is good. Octopus is ESSENTIAL! :)

Oh really? haha
Well, I'll make sure to use octopus next time, then! =D

Btw, I'm "kinda" new to Japanese food, and up until just recently I'd only had teriyaki (home made) and sushi (many, many times. NOT home made!), but now I've had Okonomiyaki and Tanuki onigiri (so easy to make, yet sooo deliscious!) as well, but I want more!

If anyone would be kind enough to name a few dishes that aren't like super complex and with ingredients that aren't too hard to find outside of Japan, or maybe even write down a few recipes I'd be forever grateful!

I want to try a Nabe hotpot. Saw it on Gintama and it looks yummeh.

I have a recipe for curry made from scratch. It is goood!

Hmm, I didn't, but I'll look for it next time I go shopping, and if I can't find it, well, I guess I'll just try a little bit of grated potato, like you said. I'll include agedama next time as well. Hopefully it'll taste even better! =D

I couldn't find any "real" okonomiyaki sauce either, so I kinda made my own okonomiyaki sauce from different recipes I found online. I don't think it tastes anything like the real deal, but I still liked it! It was something like this:

4 tablespoons of ketchup
1 tablespoon of worcestershire sauce
2 tablespoons of sake (Gekkeikan)
1-2 teaspoons of soy sauce
brown sugar (can't remember how much I used)
a little bit of honey
about 1 teaspoon of mirin
some ginger...powder...thing

I think that's it...

oh, and I also put some "vårlök" (I think they're called scallions in english) on top of the okonomiyaki. I heard that you're supposed to use konegi, but I don't know if it's the same or not.. they kinda look the same, at least!:D

One thing you could do next time is make tempura one day so that agedama will be made automatically as a byproduct and use it for okonomiyaki the next day. :)

Your sauce recipe looks great. I had thought you were going to say just worcestershire sauce and ketchup, which is what I would do if I didn't live in Japan. :D When I was a kid, most cheap okonomiyaki places around me used just worcestershire. Even now, I still prefer using just worcestershire and maiyo. Right now, the Osaka or Hiroshima style sauce is so prevalent in Japan but to me, it's just too sweet, which puts me in the minority these days. :D

Nabe is so good in the winter. Is ponzu available where you are located? Eat nabe with ponzu and it will change your views of Japanese food.

Nabe is amazing. It's not too hard to make either, as long as you can get the basic ingredients.

I've made some Teriyaki Chicken with Udon noodles recently! It was really good!
