Which ones are used when you are refering to your own and which ones are used when you are talking about them to someone else or are they interchangealbe?

These words would all be about your own parents. You can also use Otousan and Okaasan for your own parents or someone elses, but not the words from list for someone else's (unless you were VERY close to their family).

I could never get my head around family words - otousan, chichi okaasan, mother,,etc. Most people here use only otousan and okaasan,,,so I do.

My 2 year old son refers to me as pappa,,,He also calls me dad too. :)

Some people like to use Oyaji 親父(おやじ) Lol
