Sakura weren`t always THE tree - they`re mentioned pretty rarely in the early poetry and literature.
I think that somewhere along the line how quickly they fell after blooming came to emphasize their beauty - much in the way fireworks are beautiful because they`re only there for an instant before fading.

When it comes to blood though... 血染め紅葉 FTW. :mtongue:

The cherry blossom trees in Washington DC were a gift from Japan, and they're still a highlight every single year when they bloom. I think the beauty (especially because it's fleeting) is largely the reason for the attention paid to these trees.
