I'm not sure what you mean exactly, but if you are talking about
「そうか」 and 「にほんはうつくしいですか？」,
Perhaps 「そうか」should be 「なるほど」

, otherwise I would say 「そうですか」
But I think 「にほんはうつくしいですか？」 is polite if that was what you meant

so, if you use both ways,it doesn't sound very good.
but you can use「そうか(！)」(sounds like talking to yourself) to show your " ! " feelings.

When you are talking to some Japanese business man in Japanese
I would recommend「なるほど」

I don't want to scare you (haha), but there are a few polite forms (I mean like... the politest-very polite-polite-polite enough...something like that , I'm sure there should be grammartical terms for it!)
