it's used to cleanse your palate inbetween different pieces of sushi~

(by cleansing your palate, i mean that it removes any after taste of the thing you ate last so that the next thing you eat isn't going to be diluted or masked)

I knew that they put sprigs of some herb into soups.....(of which the name eludes me for the moment) so that you won't develop worms in your stomach.
