I hear that I assume a Japanese in U.S.A., and many Chinese and Koreans run the sushi restaurant.

When a Japanese entered the sushi restaurant, the sushi restaurant offered the cooking that I cannot call sushi to him. Thus he protested a storekeeper. However, the Chinese storekeeper abused him when "you were not a Japanese".

I am the same at the Japanese restaurant which a Chinese, a Korean run.

Please look for a good shop.

I like TEKKAMAKI, TEKKADON, IWASHI.

I think you should try scallop (hotate). It has quite a soft sweet flavour if it is fresth.
