不死眼 doesn't sound bad at all to me. 不死鳥眼 sounds plain weird. 鳳凰眼 looks good but it sounds kinda too dramatic.

Who do you have to please with this? Yourself or someone Japanese?

Maybe for an RPG? The series Naruto has ninjas with rad eyes that bestow them unique abilities (写輪眼、白眼 Etc.)

I'm a Manga Artist, so it's a bit of everyone.
完眼 seems ok. 完七眼 looks less ok. I would put the number kanji up front.

I hope you undestand that all these words exist only because you created them. So all I can say is how they look to me. I said 完眼 seemed ok, but that doesn't mean that other Japanese would know it meant 'perfect eyes' if they saw it.
