Here's the recipe; tell me what ya'll think and what it's called!

Ingredients:
Finely sliced lean beef
Sliced scallions

Sauce:
Mirin
Sake
Shoyu
Miso
Sugar

Broth:
Dashi
Shoyu
Mirin

1. In a sautee pan, bring to boil: mirin, sake, shoyu, miso, and sugar. Reserve in a separate bowl. Brown the beef and add butter, the sauce and scallions. Set aside.

2. In a pot boil some wheat flour noodles in water w/ sesame oil; Strain and rinse.

3. In a sauce pot, add water and a sheet of kombu. Bring to a boil then add katsuo-bushi. Turn off heat and let sit for a minute then strain through cheese cloth to remove the katsuo. Hon-dashi works as a quick alternative.
Add shoyu and mirin and bring to boil.

4. In a bowl, add noodles, broth, and beef w/ scallions. Serve w/ shichimi togarashi.
