what kind of noodles do I need? does it matter if the noodles are fresh made or if there pre-made? how do I make the broth? what are some the common things that are added to the soup? that kind of stuff

i once had a recipe for tonkotsu ramen, i can check for you once i get home. but if you're trying to make the moooost authentic ramen, it takes a loooong time to make the soup base. but i'm sure you could make something pretty close without cooking your stock forever. and for noodles, fresh are always always the better. I actually prefer "instant ramen" with fresh (non-freezedried) noodles to the normal instant ramen we're used to seeing. I'm not too sure if the recipe included how to make the noodles as well, and Im pretty sure they're not sold state side "fresh".

Then what do you want to cook for example?

I recommend Tonkatsu (Pork cutlet). Please check it at Japanese Basic Recipes .

And I looked for and found a guy's blog who is living in Mexico right now.

POOHTARO Diary - livedoor Blog

Ask him what you can cook Japanese food using Mexican ingredients by posting your comment.
