Yes, you can say it that way as well. And yes, they are basically interchangeable but you will need to remember that のよう　sounds a little bit less casual than みたい. So, depending on the context, it's safe not to change them around. I recommend that you not keep saying みたい all day. That will make you sound like a 9-year-old.

Yes, that's what it means. In kanji, it's 過ぎる. It's a very useful word, too.

クリスマスは食べ過ぎた = I ate too much around Christmas.
ナゴヤンキーはかっこよ過ぎる = Nagoyankee is way too cool.
あのレストランは高過ぎる（たかすぎる） = That restaurant is too expensive.
